Instructions:

In a food processor, add the softened butter, vanilla, potato starch, powdered sugar, baking powder, salt, and flour.

Add the eggs and blend for 3 minutes.

Add the vanilla yogurt and blend for 1 more minute.

Use a spatula to stir the batter gently and remove any lumps.

Grease and flour a cake pan (22–24 cm / 9 inches in diameter).

Pour the batter into the pan and smooth the surface with a spatula.

Bake at 180°C (350°F) for about 40 minutes, or until golden and cooked through.

Let it cool slightly, then remove from the pan and dust with powdered sugar before serving.
