1. Start by placing the chicken breasts in the bottom of your slow cooker. Sprinkle with salt, pepper, and the ranch seasoning mix.
2. In a separate bowl, mix together the cream of chicken soup and sour cream until well combined, then spread this mixture over the chicken.
3. Sprinkle the finely chopped onion evenly over the top.
4. Add a layer of shredded cheddar cheese, followed by arranging the frozen Tater Tots in a single layer on top of everything.
5. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and easily shredded with a fork.
6. Shortly before serving, sprinkle additional cheddar cheese on top and allow it to melt. Garnish with chopped fresh parsley if desired.
7. Serve hot and enjoy the comforting flavors of Midwestern tradition!
Variations & Tips
Feel free to mix things up by adding some cooked, crumbled bacon between the layers for extra savory goodness. You can also switch out the cream of chicken soup for cream of mushroom or celery if that’s what you have on hand. For a bit more color and nutrition, toss in some frozen mixed vegetables before layering on the Tater Tots. And if you like a little kick, consider adding a dash of hot sauce to your sour cream mixture.
