Instructions
Prepare the baking tin by brushing it with melted butter and lining it with parchment paper.
Step 1
Place the dark chocolate and butter in a glass bowl.

Set up a double boiler, and melt the butter and chocolate while stirring.
Step 3
Beat the eggs with granular sugar and brown sugar. Beat until light and foamy.
Step 4
Add the melted chocolate to the sugar mixture. Beat until combined.
Step 5
Sift the flour and cocoa powder into the liquid mixture.
Step 6
Pour the dough into the prepared baking tin and bake in the oven at 180°C/350°F for 25 minutes.
Step 7
Serve and enjoy!
Tips
To make the brownies fudgier, you can add an extra yolk. Use egg yolks only if you want to make it extra fudgy.
For more flavor, you can use add vanilla extract, coffee essence, or caramel essence.
Want more texture? Add chocolate chips, pecan nuts, or walnuts to the brownie batter.
Test the brownie for doneness by sticking a skewer or toothpick through the center. The skewer shouldn’t be completely clean, then the brownie is overbaked. Brownies continue to bake for a few minutes after removing it from the oven, so to prevent this you need to take it out at the right time. There should not be any wet batter on the stick, but just a few moist crumbs.
If you do happen to overbake a brownie, don’t worry! Slice the brownie into cubes and serve with ice cream!
Make your own swirl brownie: Add jam, peanut butter, cream cheese, and caramel, and swirl them in before baking. For a 9×9-inch pan, don’t add more than ¾ cups. For a larger 9×13-inch pan, you can add up to 1 cup.
How to Store Fudge Brownies
Fudge Brownies can be stored at room temperature for up to three days, or in the fridge for up to a week. Heat it in the microwave for a few seconds before serving.
Can You Freeze Fudge Brownies
Yes, you can! Wrap them tightly with plastic wrap, and freeze for up to 3 months. Thaw in the microwave.
Notes
To set up a double boiler, you’ll need a medium-sized pot and a heatproof bowl (usually glass). Make sure that the bowl and pot fit nicely onto each other—the bowl should be resting on top of the pot (in other words it should be larger). Place water inside the pot (it should not touch the bowl) and place over medium heat.
