In a skillet, heat olive oil over medium heat. Brown the beef on all sides and transfer to the crockpot.

Add potatoes, onion, garlic, dried thyme, salt, and pepper to the crockpot.

Pour beef broth over the ingredients in the crockpot. Cover and cook on low heat for 6-8 hours or until beef is tender.
