Mediterranean Salad with Artichokes, Cherry Tomatoes & Capers

Ingredients:

  • 1 jar or can of marinated artichoke hearts (about 200 g), drained and halved

  • 200 g cherry or cocktail tomatoes, sliced into thick rounds

  • 2 tbsp drained capers

  • 2–3 tbsp extra-virgin olive oil

  • 1 tbsp balsamic vinegar or lemon juice (your choice)

  • Salt and freshly ground black pepper

  • Chopped fresh parsley (optional)

🥄 Utensils:

  • A large salad bowl

  • A spoon for mixing

  • A cutting board and a knife
