Lemon Raspberry Crumble Bars

These bars are an absolute treat! Fruity raspberries, creamy lemon filling, and a crunchy crumble come together in a perfect bite. Whether with coffee, on the go, or as a dessert – they’re easy to make, wonderfully refreshing, and perfect for preparing ahead of time.

Ingredients

For the crust:

  • 150 g graham crackers (or whole wheat butter biscuits as an alternative)

  • 75 g melted butter

For the filling:

  • 350 g soft cream cheese or curd cheese (like quark)

  • 100 g sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 60 ml lemon juice

For the raspberry layer:

  • 225 g raspberry jam or lightly mashed fresh raspberries

For the crumble topping:

  • 60 g flour

  • 50 g brown sugar

  • 55 g cold butter, cut into cubes
