For the Meatloaf
- 2 lbs ground beef (80/20 recommended)
- 1 cup Italian breadcrumbs
- ½ cup milk
- 2 large eggs
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ cup fresh parsley, chopped
- ¾ cup marinara sauce (plus extra for topping)
Optional Filling Layer
- 1 additional cup shredded mozzarella cheese
- ½ cup marinara for layering
For the Topping
- ½ cup marinara sauce
- ½ cup mozzarella cheese
- 2 tablespoons grated parmesan
- Fresh basil or parsley for garnish
