Ingredients:
- 3 cups mashed potatoes (leftover or freshly made, cooled slightly)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- ½ cup sour cream
- ¼ cup + 2½ tbsp (total ~½ cup) grated Parmesan cheese
- 2–3 tbsp chopped fresh chives or parsley (or a mix of both)
- ½ tsp sea salt (adjust to taste—mashed potatoes may already be salted)
- ¼ tsp black pepper (optional)
- 2–3 tbsp olive oil or butter (for frying, if making patties)
