There’s nothing new-fangled about them, just good old-fashioned flavor.

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.   
  2. Cream Sugars and Butter: In a large bowl, use an electric mixer to cream together the butter, granulated sugar, brown sugar, and 1/2 cup of the peanut butter until smooth.   
  3. Add Egg and Vanilla: Add the egg and vanilla extract to the mixture and mix until well combined.
  4. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, and salt. Stir in the quick-cooking oatmeal.
  5. Combine Wet and Dry: Gradually add the flour/oatmeal mixture to the butter mixture, mixing on low speed until just combined.
  6. Spread and Top: Spread the batter evenly into the prepared baking dish. Sprinkle the butterscotch chips evenly over the top.
  7. Bake: Bake for 20-25 minutes, or until the edges are golden brown.
  8. Prepare Icing: While the bars are baking, whisk together the powdered sugar, milk, and the remaining 1/4 cup of peanut butter until smooth.
  9. Ice the Bars: Once the bars are baked, immediately pour the icing evenly over the warm bars.
  10. Cool and Serve: Allow the bars to cool completely before slicing and serving. Enjoy!
