Which Varieties Should You Choose?
If you grow potatoes, they need sufficient sunlight without excessive heat. Yields are better if the soil is moist, rich in humus, and has a neutral pH. Limestone-rich soil is not suitable for potato cultivation.
One advantage of growing potatoes is the wide range of varieties—more than 120 types exist, differing in size, shape, and flesh quality.
Depending on the variety, potatoes can be prepared in many ways: boiled, homemade chips, or added to salads.
-
For soft, melting potatoes, choose varieties with pink flesh.
-
For steamed potatoes, new potatoes are ideal.
-
For mashed potatoes, choose later-harvest varieties.
-
For crispy fries, varieties such as Charlotte, Samba, or Bintje are often preferred.
Nutrition enthusiasts may prefer colorful varieties with blue, yellow, red, or purple flesh, which contain higher levels of antioxidants that help fight free radicals.
Potatoes are considered a slow carbohydrate that the body absorbs easily without causing the heavy feeling that often follows large meals. Unlike refined sugars, they do not quickly convert into fat when consumed reasonably.
This makes them a convincing addition to many meals—and even helpful for weight management when prepared properly.

This simple recipe works with several potato varieties and is perfect when you are short on time.
-
Preheat the oven to 200°C (392°F).
-
Prepare a sauce in a small bowl with:
-
2 tablespoons of olive oil
-
2 shallots
-
chopped garlic
-
your preferred seasoning
-
If you need inspiration, you can add Espelette pepper, paprika, nutmeg, thyme, parsley, or Herbes de Provence.
-
Wash and dry the potatoes with a clean cloth.
-
Make small cuts in them.
-
Place the potatoes in a baking dish and brush them with the sauce.
-
Be sure to spread the seasoning into the cuts, then sprinkle with salt and pepper.
Bake for about 40 minutes. Check the oven every 10 minutes since cooking times vary depending on the variety.
When they are ready, the cuts will open slightly, creating a presentation worthy of a chef. For extra flavor, add a generous amount of paprika and a pinch of your favorite cheese.
