Spinach and Cheese Muffins

👩‍🍳 Instructions

 

 

1. Preheat the oven

Preheat the oven to 180°C (160°C fan / Gas mark 4). Grease a muffin tray well with butter or non-stick spray. Set aside.

2. Cook the spinach

Finely chop the spinach. Heat a large non-stick skillet and cook the spinach over high heat for about a minute, stirring constantly, until wilted and dark green. Remove from heat and spread it on a large plate to cool.

3. Prepare the egg base

In a large bowl, whisk together the eggs and yogurt until smooth.

4. Add the cheese

Add the crumbled feta, grated cheddar, salt, and pepper to the egg mixture. Whisk to combine.

5. Add spinach

Once the spinach has cooled, stir it into the egg and cheese mixture using a whisk.

6. Add the flour

Sift the flour and baking powder over the mixture. Gently stir with a whisk—do not overmix.

7. Fill the muffin tray

Spoon the mixture into the muffin tray compartments, filling them almost to the top. You should get around 9 muffins.

8. Bake

Bake in the center of the oven for 25 minutes, or until a toothpick inserted in the center comes out clean.

9. Cool and serve

Let the muffins cool for about 10 minutes. Use a flexible spatula or knife to loosen and remove them from the pan while still warm. Enjoy!
