Soft and Sticky Gingerbread

🍰 Instructions

  1. Preheat oven
    Set your oven to 350°F (175°C). Grease a baking pan or loaf tins.
  2. Cream butter and sugar
    In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Add eggs and molasses
    Mix in the eggs one at a time, then stir in the molasses until smooth.
  4. Combine dry ingredients
    In a separate bowl, whisk together flour, cloves, cinnamon, nutmeg, and ginger.
  5. Mix wet and dry
    Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Prepare baking soda mixture
    Dissolve the baking soda in the boiling water, then carefully stir this into the batter (it will be thin—this is normal).
  7. Bake
    Pour batter into prepared pan(s).
    Bake for 45–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool and serve
    Let cool before slicing. The texture will be soft, moist, and slightly sticky.
