Ingredients:
- 1.5–2 lbs boneless, skinless chicken breasts (or thighs)
- 3 bell peppers (any colors), sliced
- 1 large onion, sliced
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel), undrained
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & pepper to taste
- Juice of 1 lime
- Optional: 1 tbsp olive oil (for extra richness)
