No-Bake Rice Crispy Treat Cheesecake

Ingredients

For the Rice Crispy Base:

  • 4 cups Rice Krispies cereal (or any puffed rice cereal)
  • 4 tbsp unsalted butter
  • 10 oz marshmallows (mini or regular)
  • 1/2 tsp vanilla extract (optional for extra flavor)

For the Cheesecake Filling:

  • 16 oz cream cheese (softened to room temperature)
  • 1 cup heavy whipping cream
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for extra tang)
  • 1/2 cup sour cream (optional, for a richer filling)
  • Pinch of salt

For the Topping:

  • 1 cup whipped cream (for garnishing)
  • Fresh berries (strawberries, raspberries, blueberries, etc.)
  • Crushed rice crispies (optional, for extra crunch)
  • A drizzle of chocolate syrup or caramel (optional)
