No-Bake Rice Crispy Treat Cheesecake

Step 1: Prepare the Rice Crispy Base

  1. Melt Butter and Marshmallows: In a large saucepan over low heat, melt the butter. Add the marshmallows and stir continuously until fully melted and smooth.
  2. Mix in Cereal: Remove the saucepan from the heat. Stir in the vanilla extract (if using), then add the Rice Krispies cereal. Stir gently to coat all the cereal with the marshmallow mixture.
  3. Press into a Pan: Lightly grease a 9-inch springform pan or a similar-sized round or square pan. Pour the rice crispy mixture into the pan and press it down evenly with a spatula or the back of a spoon. Make sure it’s firmly packed but not overly compacted.
  4. Chill the Base: Place the pan in the refrigerator for at least 30 minutes to set the rice crispy layer.

Step 2: Prepare the Cheesecake Filling

  1. Whip the Cream: In a large mixing bowl, whip the heavy cream until stiff peaks form. This will give the cheesecake filling its airy texture. Set it aside.
  2. Beat the Cream Cheese: In another bowl, beat the softened cream cheese until smooth and creamy, using an electric mixer or a stand mixer. Add the powdered sugar, vanilla extract, lemon juice, and sour cream, and continue to beat until fully incorporated.
  3. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream—use a spatula to fold until smooth.
  4. Add Salt: Add a pinch of salt to balance out the sweetness and mix until combined.

Step 3: Assemble the Cheesecake

  1. Spread the Cheesecake Filling: After the rice crispy layer has chilled and set, spread the cheesecake mixture evenly on top of the rice crispy base. Use a spatula to smooth out the top.
  2. Chill Again: Return the cheesecake to the refrigerator and chill for at least 4 hours, or overnight if possible, to allow the cheesecake layer to set and firm up.

Step 4: Add the Topping

  1. Whip the Topping: Whip the remaining heavy cream into soft peaks.
  2. Decorate: Once the cheesecake has set, top it with whipped cream, fresh berries, and any other optional toppings like crushed rice crispies for added crunch, or a drizzle of chocolate or caramel sauce.
