My Vegetarian Zucchini Patties

These zucchini patties are so good and only take 10 minutes to prepare. The perfect dinner saver—here’s the recipe!

Ingredients:

  • 2 medium zucchinis

  • 1 egg

  • 50 g (about 1/2 cup) breadcrumbs (or a gluten-free version)

  • 30 g (about 1/4 cup) grated cheese (optional)

  • 1 teaspoon chopped parsley

  • Salt and pepper to taste

  • Extra virgin olive oil for cooking
