My Vegetarian Zucchini Patties

Preparation:

  1. Wash and grate the zucchinis using a coarse grater, then squeeze out the excess moisture using a clean kitchen towel.

  2. In a bowl, combine the zucchini, egg, breadcrumbs, cheese (if using), parsley, salt, and pepper. Mix until you get a compact and uniform mixture.

  3. With damp hands, shape the mixture into patties and flatten them slightly to form burger-like shapes.

  4. Heat a drizzle of extra virgin olive oil in a skillet and cook the patties for 2–3 minutes per side, until golden brown.
