1 lb cooked lobster meat (claw and tail, chopped)
2–3 tbsp mayonnaise (adjust to taste)
1 tsp Dijon mustard
1 tsp lemon juice (freshly squeezed)
1 celery stalk, finely diced
1 tbsp fresh chives, chopped
Salt and pepper to taste
2–4 split-top hot dog buns (New England-style preferred)
2–3 tbsp unsalted butter, softened
Optional: pinch of smoked paprika or Old Bay seasoning
