Instructions:
1. Zest and juice the lemons, ensuring you have ~2 tbsp zest and β cup of juice. Strain the juice to remove seeds and pulp π.
2. In a medium saucepan, combine sugar, water, lemon juice, and zest. Stir over low heat until sugar dissolves (about 5 minutes). Increase heat to simmer and cook without stirring until the mixture reaches 250Β°F (hard ball stage) π₯.
3. Remove from heat and add food coloring if desired. Pour the mixture into silicone molds or onto a parchment-lined baking sheet. Let cool for 30β60 minutes until firm β³.
4. If using a baking sheet, cut the candy into bite-sized pieces once set. Toss the candies in cornstarch to prevent sticking πΎ.
