Homemade Blender Sponge Cake (Makes Plenty!)

This fluffy, golden, homemade sponge cake is easy to prepare and full of that comforting “from-scratch” charm — no hand mixer required!

Ingredients:

  • 5 eggs

  • 65 g (¼ cup + 1 tbsp) butter, at room temperature

  • 450 ml (just under 2 cups) milk, at room temperature

  • 306 g (1 ½ cups + 2 tbsp) white sugar

  • 150 ml (⅔ cup) oil

  • 1 tbsp vanilla extract

  • 350 g (2¾ cups) all-purpose flour (type 0000 if available)

  • 70 g (½ cup) cornstarch

  • 15 g (1 tbsp) baking powder
