Step 1: Prepare the coconut mixture
In a bowl, combine the shredded coconut and Greek yogurt.
Mix very well with a spoon or spatula until fully combined.
If the mixture looks too dry or crumbly, add 1 extra tablespoon of yogurt.
Step 2: Shape the bars
Take portions of the mixture and shape them into small rectangular bars using your hands
(you can also use a measuring spoon or silicone mold for even shapes).
Place them on a tray lined with parchment paper or plastic wrap.
Freeze for 1 hour until firm and able to hold their shape.
Step 3: Coat with chocolate
Melt the sugar-free dark chocolate using a double boiler or microwave
(heat in 30-second intervals, stirring each time).
Remove the bars from the freezer and dip each one into the melted chocolate using a fork or spatula.
Place them on a rack or parchment-lined tray so the chocolate can set.
Step 4: Final chill
Refrigerate or freeze again for 15 minutes until the chocolate is fully hardened.
