Hawaiian Carrot Pineapple Cake

Ingredients

For the Cake:

2 cups all-purpose flour (240 g)
2 cups granulated sugar (400 g)
1 teaspoon baking soda (5 g)
1/2 teaspoon salt (3 g)
1 teaspoon ground cinnamon (2 g)
1/2 teaspoon ground nutmeg (1 g)
1 cup vegetable oil (240 ml)
4 large eggs
2 cups finely grated carrots (220 g)
1 cup crushed pineapple, well drained (240 g)
1 teaspoon vanilla extract (5 ml)

For the Frosting:

8 oz cream cheese, softened (225 g)
1/2 cup unsalted butter, softened (113 g)
3 cups powdered sugar (360 g)
1 teaspoon vanilla extract (5 ml)

For the Topping:

Toasted coconut, optional
Chopped pecans, optional
