Preparation (everything in one bowl)
Activate / mix the yeast (1 min)
In a large bowl, combine warm water, milk, dry yeast, and oil.
Mix for 1 minute. (If using fresh yeast, dissolve it well.)
Add flour and salt
Mix with a spoon or spatula until there are no dry spots.
The dough will be sticky (this is normal).
Let it rise
Cover and let the dough rest until it doubles in size.
Folding
With a wet hand or spatula, grab one edge of the dough, gently stretch it, and fold it toward the center.
Turn the bowl slightly and repeat. Do 8–10 folds.
Let rest 5 minutes, then repeat another round of 8–10 folds.
Result: the dough becomes smoother and more elastic without removing it from the bowl.
Cover and let rise again (almost double in size).
Finger test: gently press the dough; the indentation should slowly spring back but not disappear completely.
Divide the dough
Turn the dough onto a work surface and divide into 40 portions.
Shape each piece quickly into a ball and place them on a greased rectangular tray.
Cover with a cloth and let rest for 30 minutes (this prevents shrinking when shaping).
Preheat the oven
Preheat the oven to 250°C for at least 20 minutes.
Shape
With oiled fingers, gently press from the center of each ball outward to form discs about 6–8 cm wide and 1 cm thick.
Do not press too much—they should stay airy.
Prepare the brushing mixture
Mix yogurt and oil until emulsified.
Brush a thin layer over each piece.
Baking
Place the tray in the very hot oven (250°C).
Bake for 8–12 minutes, or until lightly golden (depending on your oven and thickness).
Transfer to a rack and let cool for 10–15 minutes.
The crust will soften, becoming tender and flexible.
Repeat shaping and baking the remaining batches.
Tip: keep unbaked pieces covered so they don’t dry out.

Do not add extra flour; if it sticks, wet or oil your hands.

Do not put salt directly on the yeast; mix it with the flour first.

Freezing: once cooled, you can freeze them. To serve, thaw and reheat for 3–4 minutes at 200°C.
