Easy No-Bake Chocolate Éclair Cake

Instructions

  1. In a large bowl, whisk together the vanilla pudding mixes and cold milk for about 2 minutes until thickened.
  2. Fold in the whipped topping until smooth and creamy.
  3. In a 9×13-inch dish, arrange a single layer of graham crackers on the bottom.
  4. Spread half of the pudding mixture over the graham crackers.
  5. Add another layer of graham crackers.
  6. Spread the remaining pudding mixture on top.
  7. Finish with a final layer of graham crackers.
  8. Microwave the chocolate frosting for about 15–20 seconds so it spreads easily.
  9. Spread the frosting evenly over the top layer.
  10. Cover and refrigerate for at least 6 hours, preferably overnight, so the graham crackers soften into a cake-like texture.

Tips

  • Best served chilled.
  • You can use chocolate graham crackers for a richer flavor.
  • Some people add sliced bananas or peanut butter between layers for variation.
