Pineapple Cream Cheese Cobbler
Ingredients:
1 stick (½ cup) unsalted butter, melted
1 cup all-purpose flour
1 cup granulated sugar
2 tsp baking powder
¼ tsp salt
1 cup milk
1 can (20 oz) chunks pineapple, with juice
8 oz cream cheese, softened and cut into small cubes
2–3 tbsp white or brown sugar (optional, for topping)
½ tsp cinnamon (optional, for warmth)
Instructions:
Preheat oven to 350°F (175°C).
Prepare pan – Pour melted butter into a 9×13-inch baking dish.
Mix batter – In a bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.
Assemble – Pour batter over the melted butter (do not stir). Spoon pineapple with juice evenly over batter. Scatter cream cheese cubes throughout.
Optional topping – Sprinkle brown sugar and cinnamon on top for a caramelized crust.
Bake for 40–45 minutes, until golden brown and bubbly.
Cool slightly before serving—delicious warm with vanilla ice cream or whipped cream.

2 tbsp granulated sugar

¼ cup caramel sauce
Cobbler Topping
1 cup all-purpose flour
¾ cup brown sugar
1 tsp baking powder
¼ tsp salt
½ cup melted butter
½ cup milk (or heavy cream for richer topping)
1 tsp vanilla extract
Optional Topping
Vanilla ice cream
Extra caramel sauce
Chopped pecans or walnuts
Instructions
1. Preheat oven to 350°F (175°C).
2. Prepare apple filling
In a bowl, toss apples with brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, vanilla, and caramel sauce. Spread evenly in a 9×9-inch square baking dish (clear glass works beautifully).
3. Make cobbler batter
In another bowl, whisk flour, brown sugar, baking powder, and salt. Stir in melted butter, milk, and vanilla until smooth.
4. Assemble
Pour batter evenly over apples. Do not stir.
5. Bake
Bake uncovered for 40–45 minutes, until golden on top and bubbly around the edges.
6. Cool & serve

3/4 cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch
1 tsp vanilla extract
Cobbler Topping
1 cup all-purpose flour
¾ cup sugar
1½ tsp baking powder
¼ tsp salt
½ cup milk
½ cup unsalted butter, melted
1 tsp vanilla extract
Optional
Vanilla ice cream or whipped cream

1. Preheat oven to 350°F (175°C).
2. Prepare filling

3. Make topping
In another bowl, whisk flour, sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until smooth.

Pour batter evenly over the berries. Do not stir.
5. Bake
Bake uncovered for 40–45 minutes, until golden brown and bubbling around the edges.
6. Cool & serve
