Ingredients (Serves 6–8):
For the Slaw:
- 4 cups (about 1 large head) broccoli florets, chopped into small bite-sized pieces
- 1 cup (120g) shredded carrots
- 1 large crisp apple (like Fuji, Gala, or Honeycrisp ), cored and diced
- ½ cup (80g) red onion , finely chopped
- ½ cup (60g) dried cranberries
- ½ cup (70g) sunflower seeds or chopped pecans/walnuts
For the Creamy Dressing:
- ¾ cup (170g) vegan mayonnaise or regular mayonnaise
- 2 tablespoons (30ml) apple cider vinegar
- 1–2 tablespoons maple syrup or honey (to taste )
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper , to taste
