Cottage Cheese Savory Breakfast Muffins

📝 Ingredients (Makes 8–10 muffins)

Base ingredients

  • 1 cup cottage cheese (full-fat or low-fat)

  • 3 large eggs

  • 1 cup oat flour (or blended oats)

  • ½ cup shredded cheese (cheddar, mozzarella, or parmesan)

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • ¼ tsp black pepper

Optional add-ins (choose 1–3)

  • ¼ cup finely chopped bell peppers

  • ¼ cup chopped spinach or kale

  • 2 tbsp green onions

  • ¼ cup cooked mushrooms

  • ¼ tsp garlic powder or paprika
