Cottage Cheese Savory Breakfast Muffins

👩‍🍳 Instructions

  1. Preheat oven to 180°C / 350°F
    Grease or line a muffin tin.

  2. Blend wet ingredients
    In a blender or food processor, blend:

    • Cottage cheese

    • Eggs
      until smooth.

  3. Mix dry ingredients
    In a bowl, whisk together:

    • Oat flour

    • Baking powder

    • Baking soda

    • Salt & pepper

  4. Combine
    Pour blended mixture into dry ingredients.
    Stir until just combined.

  5. Fold in add-ins
    Add shredded cheese and veggies.

  6. Bake
    Fill muffin cups ¾ full.
    Bake for 20–25 minutes until set and lightly golden.

  7. Cool
    Let cool 5–10 minutes before removing.
