Preheat oven to 180°C / 350°F
Grease or line a muffin tin. -
Blend wet ingredients
In a blender or food processor, blend:-
Cottage cheese

Eggs
until smooth.

Mix dry ingredients
In a bowl, whisk together:-
Oat flour

Baking powder
-
Baking soda
-
Salt & pepper
-

Combine
Pour blended mixture into dry ingredients.
Stir until just combined. -
Fold in add-ins
Add shredded cheese and veggies. -
Bake
Fill muffin cups ¾ full.
Bake for 20–25 minutes until set and lightly golden. -
Cool
Let cool 5–10 minutes before removing.
