Directions:
1️⃣ Cook the potatoes:
1. Place chopped potatoes in a large saucepan and cover with cold water.
2. Bring to the boil and cook for 15 to 20 minutes until tender.
3. Drain well and return to the saucepan.
2️⃣ Cook the cabbage:
4. In another pan melt half the butter over medium heat.
5. Add shredded cabbage and cook for 4 to 5 minutes until softened.
6. Stir in sliced spring onions and cook for another minute.
3️⃣ Mash the potatoes:
7. Add remaining butter and warm milk to the potatoes.
8. Mash until smooth and creamy.
4️⃣ Combine:
9. Fold cooked cabbage mixture into mashed potatoes.
10. Season with salt and pepper and mix gently.
To serve:
Serve hot with a small knob of butter melting on top. Perfect alongside sausages, roast meats, or hearty stews
