Chicken Taco Cottage Cheese Bake

Instructions:

Preheat oven to 400°F / 200°C and grease a 9×9-inch baking dish.
Lightly sauté peppers and onions for 3–4 minutes or use thin raw slices.
Whisk blended cottage cheese with eggs until smooth. Stir in cheese, Parmesan, taco seasoning, garlic powder, salt, pepper, chicken, peppers, onions, and salsa if using.
Spread into the dish and bake for 25–30 minutes until set and golden at the edges.
Let cool 5–10 minutes before slicing.
