Ingredients:

  • 3 cups mashed potatoes (leftover or freshly made, cooled slightly)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • ½ cup sour cream
  • ¼ cup + 2½ tbsp (total ~½ cup) grated Parmesan cheese
  • 2–3 tbsp chopped fresh chives or parsley (or a mix of both)
  • ½ tsp sea salt (adjust to taste—mashed potatoes may already be salted)
  • ¼ tsp black pepper (optional)
  • 2–3 tbsp olive oil or butter (for frying, if making patties)
