Carrot Cake with Cream Cheese Frosting

THE BEST CARROT CAKE
This is the most delicious carrot cake you can imagine! A tried-and-true recipe I’ve baked many times — it always turns out great and tastes amazing! The frosting is divine, but if you don’t have the ingredients at home, you can also serve the cake without it — just dust it with powdered sugar before serving. Still delicious!

Ingredients

Cake:

  • 200 g carrots (about 3 medium-sized)

  • 4 eggs

  • 4 dl granulated sugar

  • 2 dl canola oil

  • 1 tbsp baking powder

  • 2 tsp vanilla sugar

  • 2 tsp ground cinnamon

  • 4 dl wheat flour

Cream Cheese Frosting:

  • 200 g cream cheese (e.g., Philadelphia)

  • 100 g butter, at room temperature

  • 4 dl powdered sugar
