Carrot Cake with Cream Cheese Frosting

Instructions

  1. Preheat oven to 180°C (356°F).

  2. Grate the carrots finely.

  3. In a bowl, whisk eggs and sugar until pale and fluffy.

  4. Add oil and grated carrots.

  5. In a separate bowl, mix baking powder, vanilla sugar, cinnamon, and flour, then fold into the egg mixture. Stir until smooth.

  6. Pour the batter into a baking dish (approx. 32 × 24 cm) lined with baking paper.

  7. Bake in the lower part of the oven for 43–45 minutes.

  8. Let the cake cool in the pan.
    💡 Tip: It’s best to cut the cake into squares before spreading the frosting — it’ll be cleaner and easier to serve.

Frosting:

  1. Using a hand mixer, beat all frosting ingredients until light and fluffy.

  2. Spread the frosting evenly over the cake squares.

🥄 Optional Serving Tip:
If you don’t want to make the frosting, simply dust with powdered sugar — it’s still delicious!
