So Delicious Lemon Fondant Cake

Ingredients:


(for a 20 cm / 8-inch square pan)

  • 100 g (7 tbsp) butter

  • 3 eggs

  • 125 g (⅔ cup) sugar (original recipe uses 200 g)

  • 200 g (1⅔ cups) flour

  • 1 teaspoon baking powder

  • 100 g (about ½ cup) mascarpone cheese

  • 150 ml (about ⅔ cup) lemon juice (3 lemons, or 4 in the original recipe)

For the syrup:

  • 2 tablespoons sugar

  • 3 tablespoons water

  • Zest of 1 lemon
