Cornstarch & Coconut Cookies (Gluten-Free)

Ingredients:

  • 200 g cornstarch (cornflour)

  • 80 g dried shredded coconut

  • 100 g unsalted butter (at room temperature)

  • 1 large egg

  • 80 g powdered sugar (or powdered coconut sugar)

  • 1 teaspoon vanilla extract

  • ½ teaspoon gluten-free baking powder

  • 1 pinch of salt
