Southern Pineapple Cheese A new school version of the old school!

For filling:

  • 1 – 28 oz. can crushed pineapple chunks, drained
  • 1 – 4 oz. jar diced pimentos
  • 2/3 cup sugar
  • 1/2 cup all purpose flour
  • 8 oz. cream cheese, softened
  • 1/4 cup reserved pineapple juice
  • 2 cups sharp cheddar cheese, grated

For topping:

  • 1/2 cup Ritz crackers, crushed
  • 1/2 cup panko breadcrumb, crushed
  • 1/4 cup unsalted butter, melted
