Light & Creamy Zucchini Parmigiana — No Sauce Needed!

I make this Parmigiana when I want something light, creamy, and without sauce. It’s layered with zucchini and cheese and always disappears quickly!

This is a summery, stringy dish made in one pan, without any sauce or frying. I call it a “comforting” parmigiana because it’s quick to prepare with zucchini, light but nourishing, and perfect for a quick lunch or dinner (also great for guests!). Just a few ingredients, everything cooked raw in the oven, and lunch or dinner is ready.

Ingredients
