Spinach & Cheese Tart with a Potato Crust

Ingredients

For the crust:

  • 500 g potatoes

  • 1 teaspoon salt

  • 1 egg

  • 100 g all-purpose flour

For the filling:

  • 300 g spinach (fresh or frozen)

  • 200 g cheese (e.g. ricotta or feta)

  • 1 onion, chopped

  • 2 garlic cloves, chopped

  • Salt and pepper to taste

  • 2 tablespoons olive oil
