Spinach & Cheese Tart with a Potato Crust

Instructions

  1. Cook the potatoes
    Boil the potatoes in salted water until soft. Drain and mash them into a smooth purée.

  2. Make the dough
    In a bowl, mix the potato purée with the egg and flour until a smooth dough forms. Set aside.

  3. Prepare the filling
    Heat olive oil in a pan and sauté the chopped onion and garlic until golden brown.

  4. Add the spinach
    Add the spinach and cook while stirring until wilted. Season with salt and pepper.

  5. Add the cheese
    Remove the pan from the heat and gently stir in the cheese.

  6. Preheat the oven
    Preheat your oven to 180°C (350°F).

  7. Assemble the tart
    Grease a baking dish and press the potato dough evenly into the base and up the sides.

  8. Add the filling
    Spread the spinach and cheese mixture evenly over the potato crust.

  9. Bake
    Bake the tart in the preheated oven for about 30–35 minutes, until the potato crust is lightly golden.
