Cook the potatoes
Boil the potatoes in salted water until soft. Drain and mash them into a smooth purée. -
Make the dough
In a bowl, mix the potato purée with the egg and flour until a smooth dough forms. Set aside. -
Prepare the filling
Heat olive oil in a pan and sauté the chopped onion and garlic until golden brown. -
Add the spinach
Add the spinach and cook while stirring until wilted. Season with salt and pepper. -
Add the cheese
Remove the pan from the heat and gently stir in the cheese. -
Preheat the oven
Preheat your oven to 180°C (350°F). -
Assemble the tart
Grease a baking dish and press the potato dough evenly into the base and up the sides. -
Add the filling
Spread the spinach and cheese mixture evenly over the potato crust. -
Bake
Bake the tart in the preheated oven for about 30–35 minutes, until the potato crust is lightly golden.
