Colcannon : Creamy, Comforting, Traditional.

 

Ingredients:

Colcannon:

– 1 kg potatoes, peeled and chopped

– 2 cups green cabbage or kale, finely shredded

– 3 spring onions, finely sliced

– 60 g unsalted butter

– 3/4 cup milk, warmed

– 1/2 tsp salt

– 1/2 tsp black pepper

Optional topping:

– Extra butter for serving

– Chopped parsley
