Rice Salmon Patties

Ingredients:

Salmon patties:
– 415 g canned salmon, drained and flaked
– 2 cups cooked rice, cooled
– 1 small onion, finely chopped
– 1 carrot, grated
– 2 eggs
– 1/2 cup breadcrumbs
– 1/2 cup grated tasty cheese
– 2 tbsp parsley, chopped
– 1 tbsp lemon juice
– 1/2 tsp salt
– 1/2 tsp black pepper
For cooking:
– Olive oil or vegetable oil, for frying
Optional to serve:
– Lemon wedges
– Yoghurt or aioli
– Side salad
