Rice Salmon Patties

Directions:

1️⃣ Prepare the mixture:
1. In a large bowl, combine flaked salmon, cooked rice, onion, carrot, breadcrumbs, cheese, and parsley.
2. Add eggs, lemon juice, salt, and pepper.
3. Mix well until mixture holds together.
2️⃣ Shape the patties:
4. Form mixture into medium patties using your hands.
5. Place on a plate and refrigerate for 15 minutes to firm up if needed.
3️⃣ Cook the patties:
6. Heat oil in a frying pan over medium heat.
7. Cook patties for 3 to 4 minutes per side until golden and heated through.
8. Drain briefly on paper towel.
4️⃣ Optional oven method:
9. Place patties on a lined tray.
10. Lightly brush with oil.
11. Bake at 200°C fan forced for 15 to 20 minutes, turning once.
To serve:
Serve warm with lemon wedges, salad, or dipping sauce. Perfect for lunchboxes, easy dinners, or meal prep
