Homemade Pineapple Empanaditas

Ingredients

For the dough:

  • 4 cups all-purpose flour

  • 1 cup sugar

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup shortening (or butter), at room temperature

  • 2 eggs

  • ½ cup milk

  • 1 teaspoon vanilla extract

For the pineapple filling:

  • 2 cups chopped pineapple (fresh or canned, well drained)

  • ½ cup sugar

  • 1 tablespoon cornstarch

  • ¼ cup water
