Blackberry & Raspberry Cheesecake

Time

  • Chill: at least 4 hours

Ingredients (6–8 servings)

Cookie crust

  • 200 g cookies (such as speculoos or digestive biscuits)

  • 100 g melted butter

Cheesecake filling

  • 300 g cream cheese (Philadelphia or equivalent)

  • 200 ml cold heavy cream

  • 100 g powdered sugar

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice

Red berry coulis

  • 150 g raspberries

  • 150 g blackberries

  • 60 g sugar

  • 1 tbsp lemon juice
