Healthy Zucchini & Red Bell Pepper Muffins

  • Prep: 15 minutes

  • Bake: 20–25 minutes

Ingredients (8–10 muffins)

  • 1 medium zucchini, grated

  • 1 red bell pepper, finely chopped

  • 2 eggs

  • 180 g whole wheat flour (or white flour)

  • 1 packet baking powder

  • 80 ml olive oil

  • 100 ml milk (or plant-based milk)

  • 60 g grated cheese (optional: Emmental, cheddar, feta)

  • Salt & pepper

  • 1/2 tsp paprika or Herbes de Provence
