Healthy Zucchini & Red Bell Pepper Muffins

Instructions

Prepare the vegetables

  • Grate the zucchini and squeeze out excess water.

  • Cut the red bell pepper into small dice.

Wet mixture

  • In a bowl, whisk the eggs with the olive oil and milk.

Dry mixture

  • In another bowl, mix the flour, baking powder, salt, pepper, and spices.

Combine

  • Add the dry ingredients to the wet mixture.

  • Stir in the zucchini, bell pepper, and cheese.

Bake

  • Pour the batter into muffin tins.

  • Bake at 180°C (350°F) for 20–25 minutes.
