Diabetic-Friendly Stuffed Mashed Cauliflower & Potato Nests

This recipe takes the comfort of creamy mashed potato nests and makes it lighter and more diabetic-friendly by combining cauliflower with potatoes, using lean beef, and keeping portion sizes balanced. It’s hearty, satisfying, and still cheesy — but with fewer carbs and more fiber.

Ingredients

For the Nests (Base):
  • 2 large potatoes (instead of 5, to reduce carbs)
  • 2 cups cauliflower florets, steamed
  • 2 tbsp olive oil or light butter
  • 2 tbsp plain Greek yogurt (for creaminess & protein)
  • 1 tbsp fresh dill, chopped
  • ½ tsp smoked paprika
  • Salt & black pepper, to taste
  • ¼ tsp dried oregano
For the Filling:
  • 1 lb (450 g) lean ground turkey or extra-lean beef (90–95%)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 large tomato, chopped
  • 2 tbsp no-salt tomato paste
  • 1 tbsp olive oil (for cooking)
  • 1 handful fresh parsley, chopped
For Topping:
  • ½ cup part-skim mozzarella cheese, shredded
