Diabetic-Friendly Stuffed Mashed Cauliflower & Potato Nests

Instructions

Prepare the Base

  • Boil potatoes and steam cauliflower until tender.
  • Mash together with olive oil, Greek yogurt, dill, paprika, salt, and oregano until smooth.
  • Using a spoon, form small “nests” on a lined baking tray.

Cook the Filling

  • In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  • Add ground turkey/beef and cook until browned.
  • Stir in bell pepper, tomato, and tomato paste. Simmer for 5–7 minutes until thickened.
  • Season with parsley, salt, and pepper.

Assemble

  • Fill each potato-cauli nest with the meat mixture.
  • Top with a sprinkle of mozzarella cheese.

Bake

  • Bake at 375°F (190°C) for 15–20 minutes, until cheese is melted and golden.
  • Garnish with extra parsley and serve warm.
