Pecan Shortbread-Style Crust
- 1 ½ cups crushed vanilla wafers or shortbread cookies
- 1 cup finely chopped pecans
- ½ cup melted butter
- 2 tbsp sugar
- ½ tsp cinnamon (optional)
Cream Cheese Layer
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups whipped topping (Cool Whip or homemade)
Pudding Layer
- 2 boxes (3.4 oz each) instant vanilla pudding
- 3 cups cold milk
- 1 tsp vanilla extract
- Optional: ½ tsp peppermint extract (for a Christmas twist)
Top Layer
- 2 more cups whipped topping
Garnish Options
- Crushed candy canes
- Mini chocolate chips
- White chocolate curls
- Red & green sprinkles
- Chopped pecans
