Instructions:
- In a large pot, cook the Italian sausage over medium heat until browned. Remove the sausage from the pot and set aside.
- Add the onion to the pot and sauté until softened. Add the garlic and cook for another minute.
- Add the chicken broth and water to the pot and bring to a simmer.
- Add the sliced potatoes to the pot and cook until tender, about 15 minutes.
- Add the cooked Italian sausage back to the pot.
- Stir in the heavy cream and kale.
- Simmer the soup for another 5-10 minutes until the kale is tender and the soup is heated through.
- Season the soup with salt, pepper, and red pepper flakes to taste.
- Serve the soup hot with crusty bread or crackers.
